Gluten Free Oat Pumpkin Spice Minis

HAPPY THANKSGIVING!!!

These little power packed morsels are to die for... oh what have I done! Great pre or post workout bite for sure, but try to just eat no more than two!!!

Ingredients:

3/4 cup pumpkin puree

1 large free run egg

1/2 cup skim milk (could use unsweetened almond milk to make dairy free)

1 snack size Motts Natural Apple Sauce Unsweetened

1/4 cup olive oil

2 tsp vanilla extract

1/4 cup brown sugar

1 tsp allspice (use more if you like a bit more spice - I did!)

1 tbsp cinnamon (use more if you like a bit more spice - I did!)

3 cups rolled organic oats

1/3 cup semi sweet chocolate chips (optional)

1/3 cup crumbled walnuts (optional)

Heat oven to 350 degrees

In a bowl mix together the first 9 ingredients.

Add rolled oats

Add chocolate chips and/or walnuts

Grease mini muffin tin - I use an olive oil spray

Fill each cup so the batter is a bit higher than the tin - these do not rise and you don't want weird shaped pucks!

Bake for 15 to 17 minutes until toothpick comes out clean.

These little guys make 24 servings if you use chocolate chips. They are higher in carbs so a great pre or post workout punch!
